Simon Posted January 7, 2019 Share Posted January 7, 2019 A whole batch I was cooking lit up in flames and burnt my kitchen floor, some minor pieces were stuck on the sides of the pan and the heat made them ignite, lighting up the rest of the substance No one was hurt but I should have known better not to cook something flammable in my kitchen, haha. If I was closely paying attention to the r-candy I was cooking I think my face wouldve burned off; the whole mixture lit up in less than a second. Second: This is why I keep hammering on people to get an electric skillet and do this outdoors. As you have probably figured out, its not about "what if" but about "when" this is going to happen. Decomposition happens so quickly that you cannot avoid it if using flame or if you are using too little comp in your pan. Even with electric pans, they have to be the thicker and more expensive ones to keep from getting hot spots. Again, i am very happy you are OK, you do not want your face burnt off, I know all too well what it's like surviving a catastrophic burn! 1 Link to comment Share on other sites More sharing options...

MadMat Posted January 8, 2019 Share Posted January 8, 2019 (edited) The best thing to do is hit the resale shops and look for used electric deep fryers or thermostatically controlled electric fry pans. A Fry Baby or Fry Daddy makes a great pot for cooking Rcandy! The thermostat gives the benefit of not having to watch your mix every second and you never have to worry about "burning" a batch. I started out on an electric "hot plate" that had sort of a thermostat on it. It wasn't calibrated in degrees, but did give some control over the heat.
